🥞 Classic Fluffy Pancakes

Ingredients:

  • 1 cup (125g) all-purpose flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup (180ml) buttermilk (or milk + 1 tsp vinegar/lemon juice)

  • 1 large egg

  • 2 tbsp melted butter (plus more for cooking)

  • 1 tsp vanilla extract (optional)

Instructions:

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. In another bowl, whisk buttermilk, egg, melted butter, and vanilla.

  3. Pour the wet mixture into the dry ingredients. Stir gently until just combined (don’t overmix, a few lumps are fine).

  4. Heat a non-stick pan or griddle over medium heat. Grease lightly with butter.

  5. Pour 1/4 cup batter for each pancake. Cook until bubbles form on top (about 2 minutes), flip, and cook another 1–2 minutes until golden.

  6. Serve warm with butter, maple syrup, fruit, or your favorite toppings.
